Beef ularthiyathu /beef stir-fry is an awesome beef preparation. It is perfect festive recipe to compromise with the taste balance. This recipe has the real Kerala spice flavours. It goes well with chapati and rice.

Kerala Beef Fry recipe has hundreds of variations. It basically varies from region to region. Some people call Beef Fry as Beef Ularthiyathu while others call it as Beef Olathiyathu. Whatever be the name or recipe followed for Beef Fry, the common approach is to Marinate and Cook the Beef and then Pan Fry till the beef is completely dry.



Beef ularthiyathu / spiced beef stir-fry – Instructions to cook.

INGREDIENTS to make Beef ularthiyathu / Spiced beef stir-fry.

Beef – 800 grams

To pressure cook:

  • Coriander Powder – 1/2 tbsp
  • Chilli Powder – 1/2 tbsp
  • Turmeric powder – 1/4 tsp
  • Pepper Powder – 1.25 tsp
  • Ginger Garlic Paste – 2 tbsp
  • Green chillies – 5 nos
  • Water – 100 ml
  • Salt – to taste

To Stir Fry

  • Ginger – 1 small piece
  • Garlic – 8 cloves
  • Onion – 3 large
  • Curry leaves – 4 sprigs
  • Pepper Powder – 2 tsp
  • Chilli Powder – 1/2 tsp
  • Coriander Powder – 1/2 tsp
  • Garam Masala – 1/2 tsp
  • Coconut Slices – 100 grams
  • Coconut Oil – 3 tbsp
  • Mustard Seeds – 1/4 tsp

Preparation Method for Beef ularthiyathu / Spiced beef stir-fry:

  1. Clean and cut the Beef into 1 inch cubes.
  2. Finely slice the Onions.
  3. Chop the Garlic and ginger
  4. In a pressure cooker take Beef and all ingredients under ‘to pressure cook’, mix well and bring to 1 whistle, now lower the fire and allow to cook for 20-25 mins.
  5. In a Wok, heat the Oil and fry the Coconut pieces in it till turns golden brown. Remove and separate.
  6. In the same pan with some more oil, add mustard seeds , let it splutter.
  7. Add ginger and garlic pieces in the Oil and fry, add Curry leaves and fry for 30 secs till they curl.
  8. Mix the chopped Onions and fry till golden brown.
  9. Add the Beef and all other ingredients under ‘to stir fry’ and cook to a further 20 mins till all the spices blend in with the Beef, leaving you a tenderly cooked spiced Beef.
    serve Beef ularthiyathu / Spiced beef stir-fry with chapati or rice.

Ingredients

For pressure cooking

  • 1 kg beef
  • 1 tbsp coriander powder
  • 1/2 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp pepper powder
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 3 green chillies
  • water to cover the beef
  • salt to taste

For stir frying

  • 1/2 tsp coriander powder
  • 1/2 tsp chilli powder
  • 2 tsp pepper powder
  • 1/2 tsp garam masala
  • 1 inch ginger chopped
  • 6 cloves garlic
  • 2 onions sliced
  • 3 sprigs curry leaves
  • 1/2 cup coconut slices
  • 3 tbsp coconut oil
  • 1/4 tsp mustard seeds

Instructions

  •  Clean and cut the Beef into small cubes.



  •  Finely slice the Onions.



  • Chop garlic and ginger



  • In a pressure cooker take Beef and all ingredients under ‘to pressure cook’, mix well and bring to 1 whistle, now lower the fire and allow to cook for 20-25 mins.



  •  In a pan, heat the oil and fry the coconut pieces in it till turns golden brown. Remove and keep aside.



  • In the same pan with some more oil, add mustard seeds , let it splutter. Add ginger and garlic pieces in the oil and fry, add curry leaves.



  • Add chopped Onions and fry till golden brown.



  • Add the Beef and all other ingredients under ‘to stir fry’ and cook to a further 20 mins till all the spices blend in with the Beef, leaving you a tenderly cooked spiced Beef.



  • Serve Beef ularthiyathu / spiced beef stir-fry with chappati or rice.
