Ingredients

Ingredients for curd rice

  • 1/2 cup white rice or basmati rice
  • 1 1/2 cup greek yogurt
  • 1 tbsp fresh coriander leaves

For tempering

  • 1 curry leaves sprig
  • hing a pinch
  • 1/2 tbsp ginger chopped
  • 1 tbsp chana dal
  • 1 tbsp urad dal
  • 1 green chilli slit
  • 1/2 tsp mustard seeds
  • salt to taste

Instructions

  • Wash and soak rice for 20  minutes.



  • Add required water and  cook the rice.



  •  Cool it completely.



  • Add curd to cooled rice. Mix well until combined.



  • Heat oil in a pan, add cumin and mustard, when they begin to splutter, add dals and fry until golden, add ginger, chilli and curry leaves.



  • When the curry leaves turn crisp, add hing and switch off the stove.



  • Add coriander leaves, to the yogurt rice, pour the seasoning and mix.



  • Stuff the curd rice in smoked salmon and serve it with capers, gherkins and onions.
